When I originally wrote this post, there had been some amazing deals on peanut butter. So in an effort to be frugal, I found this snack as a quick and easy go-to recipe I could make with kids!
I love making these energy bites with my toddler, because he/she can eat it while we make it and it doesn’t matter!
Some of the ingredients (like sunflower seeds and coconut) I don’t use regularly, so I keep them in the fridge and freezer and then pull them out when I’m ready to use them in this recipe! This way I don’t have to pay full price for those ingredients, but can instead buy them when I see them on sale.
You Will Want One of These
I got one of these adjustable measuring cups for Christmas this past year. At first I thought I didn’t need it. I was trying to declutter and get rid of extra stuff in my house. But, after using it a few times, this came in soooo handy! It especially made it easy for kids to measure peanut butter.
I keep my energy bites in the freezer. They thaw slowly, so we pack them in a cooler when we head out for water-skiing or a picnic. They are perfect by the time we are ready for them!
I also often double the recipe. A good idea to make at the beginning of the summer and then have in your freezer for quick snacks all summer long! You really only need one or two to fill your appetite.
Ingredients
- 1/2 cup peanut butter (or any nut butter)
- 1/3 cup honey
- 1 cup rolled oats
- 1 cup shredded coconut
- 2 tsp vanilla
- 1-2 Tbsp cinnamon (we like it heavy on the cinnamon!)
- 1/2 cup chocolate chips mixed with sunflower seeds
- Consider adding chia seeds, raisins, or mini chocolate chips!
Instructions
- Mix together in a large bowl.
- Roll into balls.
- Freeze on a cookie sheet for an hour or more.
- Pack them in a freezer container or freezer bag, after they are frozen. (This way they don't all stick together.)

Thank you for sharing these great snack ideas. The no bake energy snacks sound great, and I know my kids would have fun helping make them! One of our frugal stand bys is air popped popcorn. We try all kinds of various seasonings… some are wonderful, others…. never again, but always an adventure.
