Box pancake mixes (like Hungry Jack and Aunt Jemima) often go on excellent sales with the Giant gas deals. When I can get them for FREE or only a few cents, I like to because they are quick and simple to use.
However, I do like a little more flavor, texture and substance to my pancake. I had some extra pumpkin in my fridge this fall and so I had the thought, why not add some pumpkin?
I tweaked with the recipe a little bit and we found a way to make amazingly simple and delicious box-mix pumpkin pancakes!
Ingredients
- Box of Hungry Jack Pancake Mix
- Water
- Fresh Pumpkin (or canned pumpkin would be fine too)
- Pumpkin Spice (or cinnamon and nutmeg)
Instructions
- Follow the instructions on the box to prepare the mix, except add only half the water it asks for.
- Add 1 cup of pumpkin. Stir.
- Add 1-2 teaspoons of pumpkin spice (depending on your preference).
- Because they are thicker they do take a little longer to cook. I have found that it works best if I set my griddle to a higher heat. I set mine to 400 degrees.
And viola! Incredible thick yummy pumpkin pancakes.
** TIP ** I like to roast my pumpkins in the fall and then fill small freezer containers or ziploc bags with 1-2 cups of pumpkin each. Then I can easily thaw some to make these pancakes or other quick recipes like pumpkin chili or pumpkin mac and cheese!
