Do you have a surplus of zucchini in your garden right now?
It is during these summer months that I often tend to run out of ideas on what to do with my zucchini. I’ve tried zucchini casseroles, zucchini banana pineapple bread, zucchini brownies, adding it to soups, and our simple family favorite is to toss it in Italian dressing and grill it up. Yum!
But today, we tried something new.
Zucchini noodles!
I was amazed at how simple it was. And I of course loved how it was fun for my kids to be involved . . . since our family loves cooking and being in the kitchen together!
We used a zucchini pasta noodle maker. I loved that it was easy enough for a 6 year old to maneuver. (As we approached the end of the zucchini, I did have to help him twist it.)
This little gadget made making noodles so simple! Just stick the zucchini in and twist.
We did a simple stir fry with some carrots, soy sauce and sesame seeds, and the kids loved it!
Next time, I am thinking of trying Creamy Avacado Pesto Zucchini Noodle from Eat Yourself Skinny . . .
Or maybe we’ll try even a little more color with Peanut Chicken Zucchini Noodles from Sally’s Baking Addiction . . .
